Kale, Sausage & Butternut Squash Soup

Happy Wednesday Y’all!  October is here and the weather has turned for the better…FINALLY!  The girls are hounding me to put up Halloween decor and that reminds me, I need to order Kinsey’s costume.  She is going to be a bee!  We also discovered this past weekend that her favorite person is Matt Ryan.  We are still scratching our heads on that one.  Don’t get me wrong, Matt Ryan is a stand up guy but how in the world did she come up with that.  She’s only five!  If only I had her on video when she told us, it was hilarious!  I’m curious to hear who your kid’s favorite peeps are???

You already know this but one of my besties is my slow cooker.  I use it ALL the time!  On Sunday I made a kale, sausage and butternut squash soup in it and it turned out perfect!  I’ve had it for dinner once and lunch three times. There’s six ingredients plus some spices and that’s it!  I like the Publix Greenwise Chicken and Kale sausage but you can use your favorite.  Sometimes you can find butternut squash already chopped up in the produce department.  If not, use one large or two medium-size squash.  For the kale, I buy an organic variety and use about half the bag discarding the stalky pieces.  Give it a try and let me know what you think!

  1. Add olive oil to a skillet and heat over over medium-high heat. Add onion and cook for 2-3 minutes until soft. Add garlic and cook for about 30 seconds with the onion. Scrape into slow cooker. Add chicken broth, butternut squash, chicken sausage, thyme, rosemary, salt and pepper to the slow cooker. Give the mixture a stir and cook on low for 5-6 hours. At the five hour mark, remove the sausage, slice and return back to slow cooker. Then add the chopped kale and let cook for another hour. Serve with crackers or bread.
