Jalapeño Corn Dip

What’s your favorite appetizer at a party?  I always hover near the cheese tray, buffalo chicken dip and hummus. I also love this Jalapeño Corn Dip that I’m sharing with you today.  It will not last long at your next function, I promise!  It’s only four ingredients and really easy to assemble.  Bake for thirty minutes, pair it with Frito Scoops and you are done.  Most popular dish at the fiesta!  Give it a go and let me know what you think!

  1. Preheat oven to 350 degrees. Pour frozen corn into a large bowl and heat in microwave for 4-5 minutes or until thawed. Check the corn every couple minutes and give it a stir. Drain excess liquid and return back to bowl. In a separate medium size bowl, heat butter and cream cheese in the microwave for about 2 minutes until melted. Stir well then combine with corn in large bowl. Add jalapeños and stir well. Pour mixture into a 9x12 baking dish and cook for 30 minutes or until bubbling. If you want a little more spice in the dip, at the 15 minutes mark, drizzle 2-3 TBS of jalapeño juice over the dip. Serve with Frito scoops and devour!
Recipe Notes

*I use two bags of Birds Eye Baby Gold & White Corn.  If you can't find this kind, you can use another brand or one bag or white corn and one bag of yellow corn.  You need a total of about 28-30 ounces of corn.
