Flourless Chocolate Torte

Happy New Years Eve!  I’m excited to say goodbye to 2017 and dive into 2018!  What are your big New Year’s plans?  We are just hanging around tonight watching all the New Year’s celebrations on tv.  We seldom make it to midnight anymore and will likely be in bed early.  🙂  But ya never know!

We had a delicious dinner and dined on steak, sweet potatoes, sauteed spinach, steamed broccoli, macaroni and cheese and homemade marble rye bread.  I’ll share the bread recipe soon.  It is so delish and fun to make!  We ate it with a roasted corn beef for Ben’s birthday.

New Years without dessert!  Impossible!  I made a Flourless Chocolate Torte.  I’ve been wanting to make one for Forever and found some yummy inspiration from a Martha Stewart episode and Pinterest.   If you love a rich, chocolate dessert, then this is for you!  It’s so decadent and pairs well with whipped cream, mint ice cream or raspberry sorbet.  The torte is topped with a yummy chocolate ganache and I added walnuts for taste and beauty!  Last but not least, no mixer required and you only mess up a couple of bowls.  Win Win!  Give it a go and let me know what you think!

Instructions
Make the Torte:
  1. Preheat oven to 375 degrees.
  2. Prepare an 8 inch cake pan. First, cut out a circle with parchment paper that will fit in the bottom of the pan. You can also buy pre-cut sheets at your local craft store. Place circle in bottom of cake pan and spray generously all over with non-stick spray. Set pan aside.
  3. Place Chocolate Chips and butter in a microwave safe bowl and microwave on 50% for 2-3 minutes. Remove from microwave and stir until the chocolate mixture is smooth. Add Chocolate to a medium size bowl then add sugar, eggs, cocoa powder and vanilla. Stir with a whisk until smooth and completely combined. Pour into the 8 inch pan, jiggle pan so the batter is even and bake for 20-25 minutes. Do not over bake!
  4. Remove torte from oven and let cool in pan for ten minutes. Run a knife around the edge to loosen the torte, invert the pan onto a cake platter and transfer the torte to cool completely.
For the Ganache:
  1. Place chocolate chips and heavy cream in a small, heavy saucepan. Heat on medium, stirring frequently until smooth. Don't let it come to a boil so remove it from the heat if you start to see bubbles and continue to stir.
  2. Pour ganache on top of cake and spread evenly allowing the ganache to run over the sides. Top with walnuts and place in refrigerator for at least an hour to allow the ganache to set. Store leftovers in the refrigerator for 1-2 days, if you have any left over! Enjoy!
