Chocolate Meringue Cookies

Happy Sunday!  I’ve been craving dessert all weekend.  I behaved on Friday night after dining out with friends.  Ben and I shared chicken fajitas and were pretty stuffed so that was easy to pass on.  Yesterday we went to Athens for the UGA/Bama basketball game and ate some questionable stuff all day –  um not so healthy!  I broke down last night after we got home and had some ice cream but I just wasn’t satisfied.  For one, I don’t eat much ice cream these days and it was a flavor the girls picked out.  Ordinarily I would choose gelato or Ben &Jerry’s if I’m going to cave and buy some.  I sure do love some homemade ice cream in the Summer though!

BTW I am so tired of this cold weather.  A couple of days I don’t mind but an entire week!  How about you?  I feel like this past week has been like Groundhog Day – go to work, come home, change into sweats (Yes, sweats and not cute ones!), cook, eat, sleep, workout some, repeat!  And tonight there’s a chance of freezing rain!  Sheesh and my girls are supposed to go back to school tomorrow!

But back to my dessert craving.  I’ve been cooking a lot today getting ready for the week and trying out some new recipes.  Of course I had to finally put a stop to this dessert craving so I decided to bake some Meringue cookies.  My friend, Anjali, tagged me on a recipe post a few months ago and I came across it last night.  I liked the ingredients in the recipe, knew everyone in the house would approve and gave it whir!  I subbed out half the white sugar for brown sugar and also added some chopped walnuts and toffee bits.  I baked them until they were dry and then let them cool as long as I could.  They are crunchy, light and delicate on the outside but the center is like a fudgy chocolate heaven when warm.  When cooled, the center is a little crispier and still full of flavor!  I love my version and can’t wait to make some other variations.  It does contain sugar and egg whites but there’s no flour or butter in the recipe.  Give them a go and let me know what you think!

Instructions
  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, beat egg whites and cream of tartar on high until peaks start to form and the eggs whites start to get thick. Add sugars and vanilla extract to the bowl and continue to beat on high for about 5-10 minutes until you get stiff peaks and the mixture appears glossy. Sift cocoa into mixture and mix until combined. Then add in chocolate chips, toffee bits and chopped walnuts and give it a stir with a spoon or stir on low with your mixer. Drop spoonful (about 2 TBS) of the batter onto the lined baking sheet and bake for 30-40 minutes until the cookies are dry. Mine took 35 minutes. Move them to a cooling rack to cool completely. Store at room temperature in a sealed container. Enjoy! You won't eat just one!
