Butterscotch Blondies

I finally broke down and made some Blondies!  I can’t believe I’ve never made them before.  I suppose I’ve always been so focused on cookies and brownies that I neglected this sweet treat!  What was I thinking! These Butterscotch Blondies are delicious!  The first time I tested the recipe, I made them with chocolate chips.  They were good but after some friends and family reviews, I decided to make them with butterscotch chips and some toffee bits.  The texture is so moist (I know that word makes everyone cringe!) and the butterscotch chips create an unbelievable crispy, toffee like crust on the bottom.

This recipe is also so versatile –  you could add some coconut (not me!), nuts or chocolate if you like!  Let’s go ahead and get this out of the way.  I am not a big coconut fan so I will not bake you a coconut cake and I don’t put raisins in any of my cookies, EVER!  🙂 I do like raisins but not in cookies!  Just saying!  Give theses Blondies a try and let me know what you think!   Per Ben’s request, I will be working on a “flourless” recipe. Stay tuned!  I also found some Ghirardelli Caramel Chips at Walmart…OMG, yes!  I will be making some Blondies with those!

Instructions
  1. Preheat oven to 350 degrees. Line an 8x8 metal baking pan with parchment paper. Set aside.
  2. Combine flour, baking powder and salt and sift into a small bowl. Set aside.
  3. In a large bowl, mix melted butter and brown sugar with a whisk until combined. Add vanilla then one egg at a time. Mix well. Add in flour mixture until incorporated then fold in butterscotch chips and toffee bits. Pour batter into pan and spread evenly with a spatula. Bake for 20-30 minutes until a toothpick comes out clean. Mine take 25 minutes to bake.
  4. Cool Blondies on a cooling rack. Cut into squares and devour!
