“Bikini” Ham and Cheese

You are probably wondering about the name of the sandwich!  It’s quite unique!  Cooks and Soldiers, a restaurant here in Atlanta, has been on my dining bucket list and I finally made it there a couple weeks ago.  A friend told us we had to order the “Bikini”.  I looked it up on their menu but didn’t fully appreciate it until it was placed in front of us.  It was this perfect sandwich – lightly toasted bread, melted cheese, ham and a black truffle oil spread that was amazing.  I could have eaten about half a dozen of them and would not fit into a bikini so the name makes perfect sense. Luckily there are only four pieces on a plate!  I decided I had to try and make it at home.  I used regular ham and white truffle oil and it turned out great. It’s definitely more of an adult grilled cheese as my girls weren’t crazy about the cheese or truffle oil.  Their loss!  If you are looking for an upscale grilled cheese, this is it or head over to Cooks and Soldiers and try the real thing.  That’s my two cents!

  1. Mix mayonnaise and truffle oil together in a small bowl. Heat a skillet over medium heat. Using a butter knife, spread a thin layer of mayonnaise onto one side of each bread slice. Take one bread slice and carefully brush butter onto the other clean side. Add buttered slice to skillet then add one slice of cheese, ham and one more buttered slice. Repeat each time for a new sandwich. Grill on each side until lightly golden. Cut and serve immediately.
